PURPOSE:To obtain dressed meat of chicken having good taste, by sticking a flexible thin sheet fast to the surface of loosened chicken, attaching water to the surface of the film, blowing cold air on the film in this state so that the chicken is cooled secondarily without freezing the chicken. CONSTITUTION:In a method of treating chicken consisting of a process to remove blood and viscera from slaughtered chicken, a process to immerse the slaughtered chicken in cold water to cool it primarily, a process to loosen the cooled slaughtered chicken and to take bone out of it to give dressed meat and a process to cool it further secondarily into an unfrozen state, the flexible and thin sheet 1 which is transformable along the outer shape of the dressed meat is stuck fast to the surface of the loosened dressed meat 2. Cold air at 0--6 deg.C is blown at >=5m/sec air velocity, so that the dressed meat is secondarily cooled without freezing it. Consequently the surface of the thicken is not dried during cooling, it can be cooled while keeping high quality and tasty dressed meat of chicken can be obtained. |
