PURPOSE:To obtain a vinegared soybean embryo useful as an excellent health food, by treating soybean embryo with a vinegar, thereby removing the bitter taste and harsh taste without decreasing the rich medicinal components of the soybean embryo. CONSTITUTION:Raw or processed soybean embryo is mixed thoroughly with vinegar and aged in the vinegar for a specific period, or raw or processed soybean embryo is cooked by using vinegar as the cooking medium according to the normal rice cooking procedure. The obtained vinegared soybean embryo is optionally dried and if necessary, the dried vinegared soybean embryo is pulverized. |
