PURPOSE:To produce herring roe having retained flavor, chewy and sense of eating unique to the herring roe and further deliciousness imparted thereto, by applying a coating to herring roe from the Atlantic Ocean and frying the resultant herring roe in oil. CONSTITUTION:Flexible herring roe from the Atlantic Ocean is cooked and washed by the conventional method and a kneaded flour prepared by kneading soft - medium wheat flour with water or a bread crumb layer is moderately applied to the surface thereof. The resultant herring roe is frozen or, without freezing, directly heat-treated in an edible oil. |
