PURPOSE:To produce a KAKI-MOCHI (sliced and dried rice cake) having bulky and coarse texture and takable even by a man having bad teeth, e.g. an aged man, by heating the raw material of KAKI-MOCHI with an electronic range and baking in an oven. CONSTITUTION:The unbaked raw material of KAKI-MOCHI which is an air- dried rice cake is heated with an electronic range to expand the texture and then baked in a gas oven until a proper scorch mark is developed on the surface.
