Raw material e.g. straw, cereals etc., is chopped and milled to about 5 to 6 mm grain size. The material is stirred at 60 rpm. in a closed chamber and soya flour is added as a source of nitrogen. Water at not less than 90 deg. C is added until the mixt. has moisture content of 70%. Steam is then injected at a temp. of about 110 deg. C to increase the moisture content of between 77% to 80% over a period of about 15 mins. The chamber is heated externally to sterilise the mixt. for 35 mins. With the steam at 100 to 120 deg. C. The chamber is then cooled externally to between 20 and 30 deg. C while the mixt. is stirred and the chamber pressure brought into equilibrium with that of the atmos. - An inoculum of grain size between 1 and 3 mm is added and mixed in at speed of 30 rpm. for between 5 and 15, pref. 5 mins. The substrate is filled into sterile bags. - The appts. is also claimed where the chamber is a vertical cylindrical, steam-jacketed vessel with convergent conical lower section. The vessel is equipped with a vertical coaxial, conveyor screen/agitator.
