<p>PURPOSE:To produce a SHOCHU (low-class distilled spirits) free of unagreeable smell and having excellent taste and flavor and high amylase titer, in shortened fermentation time, by using milo as the malt or fermentation material. CONSTITUTION:Milo is preferably skinned and crushed to obtain crushed milo wherein the ratio of the fraction having particle diameter of 0.5-3mm is >=80%. The milo is used as the malt and/or fermentation raw material to obtain the objective SHOCHU.</p> |
