PURPOSE:To obtain a surface-active substance suitable to a food, a medicine and a cosmetics or the like by using a cell wall such as a residue wherein the available substances are extracted from a fungus body of beer yeast as an effective component and forming the surface-active substance. CONSTITUTION:The surface-active substance wherein the cell wall of beer yeast is made to an effective component is obtained by applying the following methods, namely a method so that an alkali such as NaOH and aq. H2O2 are added to the residue of yeast and the mixture is heated and thereafter cooled and washed with water, a method so that an acid is added to the residue of yeast and thereafter the mixture is subjected to the autoclave treatment and also to the solid-liquid separation and a method so that the fungus body of yeast are enzymically decomposed and thereafter subjected to the solid-liquid separation. Still further, if necessary,the refrigerating drying is performed and it can be pulverized. The above-mentioned surface-active substance may be used independently or together with the other surface-active agents. As the amount to be added, the same degree as the case of a synthetic or a semisynthetic surface-active agent or below is effective. |
