PURPOSE:Raw echini are dipped in oil which is kept at a certain temperature, and low vacuum is applied first, then high vacuum subsequently to effect dehydration without any adverse effect on protein, a variety of vitamins, essences, color without their dissipation. CONSTITUTION:Raw echini are dipped in oil which is previously heated up over 90 deg.C at which the protein of the echini coagulates. As the first stage, low vacuum, e.g., 10-20mmHg is applied usually for 30min, then high vacuum of, e.g., 740-750mmHg is applied to effect dehydration. Susequently, the same vacuum is continued to effect oil removal. |
