摘要 The invention relates to a method for producing cheese, which comprises the following stages: subjecting a milk or a treated milk to a treatment combining ultrafiltration and diafiltration in order to obtain a concentrated milk; adding a lactic acid bacterial initiator and a rennet to the concentrated milk in order to convert the K-casein contained therein into para-K-casein by the action of the rennet; coagulating and curdling the resulting concentrated milk by adding a water-soluble calcium salt.
