<p>Prodn. of chocolate masses, e.g. coatings, glazes and the like, consists of premixing cocoa material and/or cocoa powder, cocoa butter, vegetable fat, milk powder, then batch grinding followed by passing through a thin layer degasifying reactor and homogenising until the premixer is completely emptied. No recycling to the premixer takes place. - Pref., during homogenising, a portion of the material is recycled from the homogeniser at least once through the thin layer degasifying reactor and then back to the homogeniser. In a variant, after the premixer has been completely emptied and its contents have passed to the homogeniser, the latter is emptied by recycling its contents at least once through the reactor and back to the homogeniser. Opt., in this method, the material may pass through the grinder before entering the thin layer reactor.</p> |
