PURPOSE:To increase times of roasting, and to improve fragrance and flavor of a material to be roasted, by keeping previously the temperature in a roasting container at >=a set lagging temperature. CONSTITUTION:The preheating switch 40 is closed, given electric current is sent to the motors 31 and 33 and the heater 27 by the controller 41, the container 11 is preheated, and the controller 41 is kept at a given temperature by the temperature sensor 35. The material 30 to be roasted is fed from the feed opening 15, reduction in temperature in the container 11 is detected by the sensor 35, electric current is sent through the controller 41 to the motor 13 and the heater 27, the temperature is raised and the material is roasted. When the roasting is finished, the cover 17 is opened, the material 30 to be roasted is taken out from the outlet 16, the motor 33 is driven, the open air is introduced by the fan 34, the container 11 is cooled, the temperature in the container 22 is detected by the sensor 35. When the container reaches a set lagging temperature, the preheating switch 40 is closed, the fan 34 is stopped, the heater 27 is subjected to on-off control, and the temperature in the container 11 is kept at a lagging temperature.
