PURPOSE:To produce the titled enzyme exhibiting high stability and activity over a wide pH range and having high thermal stability, at a low cost, by culturing a bacterial strain belonging to Pediococcus genus, etc., and capable of producing the titled enzyme, and separating the produced and accumulated enzyme from the cultivation product. CONSTITUTION:A bacterial strain belonging to Pediococcus genus, Lactobacillus genus or Streptococcus genus and capable of producing N-acylneuraminic acid aldolase (especially preferably Pediococcus acidilactici IFO 3885, Pediococcus damnosus IFO 3889, Lactobacillus sp IFO 3691, Lactobacillus sp IFO 3957, etc.) is cultured in a nutrient medium, and the N-acylneuraminic acid aldolase produced and accumulated in the cultivation product is separated therefrom by conventional method. The N-acylneuraminic acid aldolase produced by the present process exhibits high stability and activity over a wide pH range and has high thermal stability. |
