摘要 PURPOSE:To provide the titled composition composed of specific plural kinds of 1,3-di-sagturated-2-oleoylglycerols and other glyceride mixture and having excellent properties such as heat-resistance, palatability, shape-retainability, snapping property, bloom resistance, etc. CONSTITUTION:The objective composition can be produced by compounding (A) <=80(wt)% 1,3-di-saturated-2-oleoylglycerols consisting of <=10% 1,3- dipalmitoyl-2-oleoylglycerol (POP), 25-45% 1-palmitoyl-2-oleoyl-3-stearoylglycerol (POSt) and 45-70% 1,3-distearoyl-2-oleoylglycerol (StOSt) with (B) <=20% glycerides consisting of <=10% triglyceride having two unsaturated bonds in a molecule, <=6% diglyceride, <=5% 1,2-di-saturated-3-oleoylglycerol, <=5% tri- saturated-glyceride, <=5% tri-saturated-glyceride and <=5% triglyceride having >=3 unsaturated bonds in a molecule.
