PURPOSE:To shorten extremely aging time, by retaining raw noodle lines obtained by cnventional procedure at 40-90% humidity at a specific atmosphere temperature for a specific time. CONSTITUTION:Raw noodle lines obtained by a conventional procedure are retained in an atmosphere with 40-90% humidity. The raw noodles are retained at an atmosphere temperature for a retention time in a range enclosed by lines connecting the point A (time 0.5min, temperature 100 deg.C), the point B (time 1.5min, temperature 75 deg.C), the point C (time 4min, temperature 45 deg.C), the point D (time 8min, temperature 45 deg.C), the point E (time 3.5min, temperature 75 deg.C) and the point F (time 1.5min, temperature 100 deg.C) of the orthogonal coordinates, and aged. Then the raw noodles are boiled. |
