PURPOSE:To obtain a water-soluble honey soluble instantly in water to give a delicious honey drink, by adding a small amount of sodium carbonate to honey and stirring the mixture to effect the redox reaction between the glucose and fructose contained in the honey. CONSTITUTION:Sodium carbonate is added to boiling water, and the mixture is boiled for 5min and cooled. After cooling, honey is added to the solution and stirred. The CHO group of glucose is oxidized to COOH group and the glucose is made soluble in water by this process. At the same time, the =CO group is oxidized to COOH group to make the fluctose solution in water. The water-soluble honey produced by the method of the present invention can be dissolved instantly and completely only by the addition of water or other cooled drink to afford a delicious honey drink. |
