PURPOSE:Animal brains and bone marrow are emulsified together with animal or vegetable oil to give an instant seasoning with palatability of these brain or bone marrow kept as they are. CONSTITUTION:Brains or bone marrows of domestic animals or poultry or their mixture are combined with animal or vegetable oil or their mixture in an amount of 0.2-2 times the amount of the brains or marrows and mixed under high-speed agitation at 60-80 deg.C. When needed, insoluble substances are removed while it is hot, then, the product is sterilized at 80-120 deg.C for 30-60min and cooled down to give the objective seasoning paste. |
