PURPOSE:To provide the titled emulsifier containing an effective amount of phosphatidyl glycerol, resistant to the vatiation of the emulsifying power against the variation in the polyvalent metallic ion concentration and pH, and having excellent stability. CONSTITUTION:The objective emulsifier contains an effective amount of phosphatidyl glycerol obtained preferably by the ester-exchange reaction of soybean lecithin and glycerol using phospholipase D. |
