PURPOSE:To obtain the titled substance (alpha-APM) useful as a sweetener, with simple process, in high yield and quality, by a specific method using an alpha,beta-mixture of N-formyl-L-aspartyl-L-phenylalanine as a raw material. CONSTITUTION:An N-formyl-alpha-L-aspartyl-L-phenylalanine containing 5-30% beta-isomer is treated with an acid (e.g. hydrogen chloride) in methanol preferably at 20-60 deg.C for 1-30hr to effect the deformylation and diesterification. The produced L-aspartyl-L-phenylalanine dimethyl ester is hydrolyzed with hydrochloric acid preferably at 10-40 deg.C usually for 1-10 days. The amount of the hydrochloric acid is preferably 1-5mol based on 1mol of the alpha,beta-mixture used as the raw material. The objective alpha-APM can be produced by neutralizing the precipitated alpha-APM hydrochloride with sodium carbonate, etc.
