摘要 (Semi)prepd. desserts are made from fruits and/or vegetables vegetables (or their concentrates) and opt. milk (or milk prods.) with addn. of sugar, a buffer salt or food-grade acid plus colours and/or flavourings, then heat treatment and opt. preservation. The new feature is that a pectin (I), of low or high deg. of esterification (DE), and pref. before use, a source of Ca and/or Mg ions are added. To produce a fluid liq. prod. (I) has DE 50-75% and to produce a thickened liq. (I) has DE 20-50%.
