α-L-Aspartyl-L-phenylalanine esters(I) were prepd. from aspartic acid derivs. and phenyla anine esters by using microbial protease. Thus, 0.5 mole N-fluorenyl methyl formyl aspartic acid and 0.55 mole phenylalanine ester were dissolved in 2 l of 20% dioxane and adjusted with Tris-boric salt buffer soln. to pH6.4. 0.2 mg Protease from Bacillus colistinus was added into reaction mixt. and reacted at room temp. for 24hr. to give N-fluorenylmethylformylaspartylphenylalanine methyl ester. The resulting esters were reduced on 5% Pd/c catalyst to give 78% (I). (I) is used as artificial sweetner.
