PURPOSE:To obtain a marine algae food having a preferable flavor free from a fish-like smell of marine alge of raw Monostroma nitidum Wittrock, by scalding marine algae of Monostroma nitidum Wittrock to deactivate enzymes, and flavoring them with a seasoning solution containing apple vinegar. CONSTITUTION:Marine algae of Monostroma nitidum Wittrock are washed with water, optionally admixtures are removed, the marine algae are dehydrated into about 65-85wt% water content. Harshness of marine algae is removed by this dehydrating treatment, and the treatment is effective for extracting a good fragrance. Then, the marine algae are scalded. The treatment is heat treatment in a short time to deactivate enzymes and to prevent change in quality of the marine algae, and is carried out usually at 80-90 deg.C for about 20-1min. Then, the marine algae are flavored with a seasoning solution containing apple vinegar to give a product. Monostroma nitridum Wittrock, Monostroma latissimum Wittrock, etc. are used as the marine algae of Monostroma nitidum Wittrock. |
