摘要 The invention provides a process for preparing a food flavour by inactivating yeast and carrying out enzymatic degradation of biopolymers in conjunction with fermentation with micro-organisms. Preferably the enzymatic degradation is carried out with more than one enzyme either simultaneously or sequentially.
