PURPOSE:To mass-produce a broth with a high concentration and good flavor in a short time, by charging a raw material into pure water, boiling down the raw material, removing the raw material, recharging a new raw material, of the same quality thereinto, and repeating the boiling down. CONSTITUTION:A raw material, e.g. chicken bone or vegetable, is charged into pure water, and boiled down. The raw material is then removed, and a new material of the same quality is then recharged thereinto, and boiling down is repeated to give the aimed broth with increased concentration. |
