Juice and puree is extracted from fruit in an extractor having a cylindrical body and fed into a hopper with at least two stages each of which has a separate outlet, with a perforated strainer positioned between the cylindrical body and the hopper. A cylindrical vaned rotor is positioned in the housing to act with the strainer to separate juice and puree from waste material and cause the juice and puree to pass through the strainer into the selected stages of the hopper. The rotor has a number of vanes extending the length of the rotor each vane having a working surface which is raked forwardly in the direction at the outer end nearest the strainer and forming an obtuse angle with a plane tangential to the strainer at the tip of each vane.
