摘要 Process for clarification of second carbonation sugared juices (e.g. from beetroot) by decantation of the solid impurities in suspension in the juices, comprises continuously recycling in the decanted juice the sludges or 'foams' formed during the decantation; adding to the 'foam-juice' mixt. (I) a first flocculant comprising a cationic polymer and after an efficient contract of the flocculant with the mixt. (I), adding an anionic or non ionic polymer prior to decantation. An appts. for carrying out the process is also claimed. Pref. the eationic polymer is of mol.wt. 1-10 millions and is added at 1-10 ppm. and under a shear rate of 500-1000 sec-1. ADVANTAGE - A clarified juice is obtd. having turbidity equivalent to that obtd. by filtration. Decantation is carried out efficiently while ensuring a reduction of supersaturation in CaCo3. Elimination of colloidal SiO2 in the juice is also improved.
