PURPOSE:To produce snapping turtle powder, having suppressed flavor unique to the snapping turtle, and containing rich honey, by dipping roughly crushed snapping turtle in honey, and freeze pulverizing the crushed snapping turtle in liquid nitrogen. CONSTITUTION:A snapping turtle roughly crushed to about 2-3cm square size is dipped in honey for at least >= one week and freeze-dried to <=4% moisture content, and the resultant dried snapping turtle material is then dipped in liquid nitrogen, instantly frozen and then finely pulverized to give particles having <=200 mesh particle size in a nitrogen gas atmosphere at <=-50 deg.C. |
