<p>PURPOSE:To produce the titled drink, having improved palatability, and capable of keeping the homogeneous state for a long period without forming insoluble aggregates, by adding a saccharide to a milk protein-containing solution, adjusting the pH to a specific value, and heating the resultant solution. CONSTITUTION:A saccharide, e.g. glucose, in an amount of 5 times or more based on the weight of milk protein is added to a milk protein-containing solution with 0.1-5.0wt% protein content prepared from cow's milk or sheep milk, and lactic acid, citric acid or fruit juice, etc. is added thereto to adjust the pH to 3.2-3.6. The adjusted solution is then heated at 55-95 deg.C to give the aimed milk protein-containing alcohol drink with 1-20vol./vol% ethyl alcohol concentration and 2-15wt./wt% saccharide concentration.</p> |
