The invention relates to dried potato granules, which are swellable in hot water, for the preparation of instant dumplings by placing water-permeable bags or the like, which are filled with the granules and, possibly, other dry products, into hot or boiling water, a dough mixture being prepared from raw and/or semi-cooked and/or completely cooked potatoes or potato starch and if required up to 50% of the total mass of other starch carriers or starches and water and conventional additives, granules are formed therefrom using pressure, and these are dried, this being obtainable by forming shaped bodies of which one dimension is below 0.7 mm in thickness and these shaped bodies being comminuted to a size so that the bulk density of the dried granule pieces, which are dried to a maximum residual moisture of 10%, is in the range between 250 kg/m<3> and 550 kg/m<3> in a loose packing, at least 5% of the total starch being gelatinised, and the process for the production thereof and the use for producing dumplings. |
