The machine for slicing racks of chops or the like has a special holding device 7 with a plurality of penetrating elements for the end of the material to be sliced. In order to ensure that the latter is penetrated as far as possible and held as securely as possible, even when the meat contains bones and therefore objects which offer a fairly high degree of resistance, the penetrating elements are designed so as to move individually and to be affected by an adjusting force in such a way that they penetrate the end of the material to be cut independently of one another, in accordance with the resistance which has been found to exist in each case. In particular, the penetrating elements may be claws 8, which are individually rotatably mounted on a common spindle 9 and have lever-like ends 11 to permit action by tension springs 12. A pivotable actuating bracket 13 may form the support for the tension springs 12. According to the pivoting position of the actuating bracket 13, the claws 8 come into connection with a stop 16 in the releasing or holding position. <IMAGE>
