PURPOSE:To obtain the titled drink suitable for drinking, having improved mixed and integrated flavor, comprising a fermented solution as a main component obtained by subjecting a mixture of treated raw pumpkins and dairy products of animal, etc. having a specific ratio of fatless solid content to lactic acid fermentation with common lactic acid bacteria for foods, separating molds from the mixture to give the formented solution. CONSTITUTION:Raw pumpkins are ground, their juice is squeezed to give puree, which is blended with water to give treated raw pumpkins, to which animal or vegetable dairy products (e.g., milk, soybean milk, etc.) are added in such a way that a fatless solid content is <=10wt%. The mixture is sterilized under heating, cooled, blended with common lactic acid bacteria (e.g., Lactobacillus bulgaricus, etc.), subjected to lactic acid fermentation, molds are separated from the mixture to give a fermented solution, which is optionally concentrated and/or adjusted to give the aimed drink. |
