PURPOSE:To remove simply astringency of astringent persimmons without removing various medicinal components, and to obtain astringent persimmon juice suitable as a drink, by squeezing astringent persimmon juice, and subjecting it to ultrafiltration. CONSTITUTION:Unripe astringent persimmons of SAIJYO, MYOTAN, etc., are washed with water, squeezed by a pressing machine, and separated into solid content and astringent persimmon juice by a screen, net, etc. Then, the squeezed juice is treated with an enzyme, filtered with a filter paper for production and subjected to ultrafiltration by the use of an ultrafilter, to give the aimed fruit juice.
