In baking ovens, extraction of the vapours is a particular problem especially during a roasting operation. There are various possibilities for drawing off these vapours; in most cases, however, the roasting-oven door is opened and additional extraction parts would have to be pulled or pivoted out. In the present embodiment, the vapour extraction opening (4) is provided on the region (7, 8) of the baking-oven housing (2) which adjoins above the baking-oven opening and is covered, when the baking-oven door (3) is closed, by the upper edge of the same. Also provided in the upper edge region of the baking-oven door (3) is a passage duct (6) which, when the baking-oven door (3) is closed, connects the oven space (1) to the vapour extraction opening (4). As a result, the vapour extractor is constantly ready for operation without additional measures having to be taken. <IMAGE>
