[Also in Division H2] In a process for cooking meat in water in a thermally insulated container, at the end of a timed heating-up period to a preselected temperature, the heating means is de-energized during a timed cooking period, which is ended by automatically draining the water from the container. A thermostatically controlled heating stage may be interposed between the timed heating-up and the cooking stages to give an initial cooking temperature which is slightly higher than the pre-selected temperature. Depending on the setting of a three position rotary selector switch S1A-E, the cooking period may be automatically followed by two (lamp P10 lit), one (lamp P11 lit) or no (lamp P12 lit) cooling stages in which cold water is admitted to the container C for a period, normally 10 minutes, timed by timer C3, and drained therefrom. At the beginning of the operating cycle, stepping relay R5 is reset by coil R5A to close contacts ST. Operation of the starting switch SW3 may be followed immediately by energization of stepping relay R5 by pulse unit R4, to open contacts ST and close the first pair of controller contacts 1A and 1B. Alternatively, this action may be delayed by timer C2, on closing switch SW4. On energization of the water admission valve solenoid R11, through contact 1A, cold water enters container C, until it reaches electrode E1, when relay R7b operates contact X12 to operate a pulse unit R4 and cause R5 to step to contacts 2A and 2B. A heating control solenoid R10 is thereby energized, under the control of timer C4 and thermostatic switch TM1. On expiry of the first heating period, the relay steps to contacts 3A and 3B and the heating continues under the control of thermostatic switch TM2. On the closure of contacts D4, the relay steps to contacts 4A and 4B to de-energize the heating solenoid R10 and allow the cooking period to run under the control of timer C5. On transfer of contacts D5, the relay steps to contacts 5A, 5B operating discharge valve control solenoid R9. The absence of water, detected by electrode E2, may then initiate the first cooling stage by stepping the relay to contacts 6A (equivalent to 1A) and 6B. The operation of timer C3 is followed by a drainage step and repetition, if required, of the cooling stage. Safety and indicator devices include a mains failure bell B and a clock C1 which will stop at the time of the failure, a bell B2 indicating the end of the selected cycle, a test circuit with indicator lamps P15 and P 16 for electrodes E1 and E2 and signal lamps P1-9 to indicate the activity at present in operation. The container is preferably of stainless steel.
