PURPOSE:To obtain powder of Japanese persimmon useful as a raw material for various processed foods causing no rancidity without decomposing active ingredients contained, by freezing Japanese persimmons with liquid nitrogen, grinding them by a low-temperature grinder, and freeze drying them in vacuum. CONSTITUTION:Japanese persimmons are washed with water, seeds, calyxes, etc. are removed, the persimmons are frozen with nitrogen, ground by a low- temperature grinder, and freeze dried in vacuum, to give the aimed powder of persimmons. Consequently, the stable powder of persimmons can be obtained without decomposing active ingredients such as vitamin, carotene, etc., contained in the persimmons. The prepared powder is used as a raw material for ice cream, juice, etc., and a raw material for extracting tannin. |
