A process for moulding or post-moulding plastic foodstuff compositions, for example ice cream, is described. The shaping takes place in or using a porous moulding tool, the walls of which, shaping the composition, have flowing through them a slowly flowing gas, for example air or nitrogen, in such a manner that a gas cushion forms between the composition and the mould walls. Moreover, a moulding tool for carrying out the process is described. The moulding tool has the following features: - a moulding part (2) with gas-permeable walls; - a gas-distribution chamber (3); - at least one gas feedline (4) leading to the gas distribution chamber. The gas-permeable walls of the shaping parts can consist of porous sintered plastic or stainless steel; the walls may also have a multiplicity of continuous microbores. <IMAGE> |
