PURPOSE:To prepare instant noodle impregnated with the extract of ingredient, and having excellent taste and flavor, at a low cost, without necessitating the drying of ingredient, by inserting an ingredient in a noodle block, and frying the noodle containing the ingredient in an oil. CONSTITUTION:The objective instant noodle can be prepared by inserting an ingredient such as vegetables, algae, fish paste product, fish meat, cattle meat, etc. into a collected mass of noodle strings such as Chinese noodle, buckwheat noodle, wheat noodle, etd., i.e. a noodle block, and frying the product in an oil. Oil-fried instant noodle has been produced hitherto by the process comprising the noodle-making, steaming, packing frying in oil, cooling and packaging, and almost allingredient such as vegetable is so-called dried ingredient, and is prepared separately and attached to the bag or cut in the packaing. The taste and flavor of the ingredient cannot be demonstrated fully by the above process, and the production cost becomes high because the drying of the ingredient is necessary. Since the ingredient is fried in an oil in a state inserted into a noodle block in the present invention, the taste and flavor of the noodle are improved by the impregnation of the extract of the ingredient, and the cost necessary for the separate drying of the ingredient can be remarkably reduced. |
