PURPOSE:To make it possible to prevent the deterioration of green tea and increase the processing temperature and obtain a good product having a strong taste and flavor, by roasting green tea leaves in an atmosphere of an oxygen- free gas or low-oxygen gas. CONSTITUTION:For example, green tea leaves are roasted while supplying an oxygen-free gas or low-owygen gas to the interior of a rotating drum 1 of a rotating cylindrical firing machine by a gas supply pump 9. In this case, the rotating drum 1 is heated. However, the oxygen-free gas or low-oxygen gas may be heated and then blown on the green tea leaves.
