PURPOSE:To obtain a novel food having good digestibility and improved taste and sense of eating, etc., and improve the usability of miscellaneous cereals, by heating the miscellaneous cereals with saturated steam under pressure, releasing gradually the pressure and frying the resultant heated and pressurized miscellaneous cereals in oil. CONSTITUTION:Miscellaneous cereals, preferably foxtail or millet are usually polished and heated with saturated steam under preferably 3-5kg/cm<2> pressure for 30sec-10min. The pressure is gradually released to give heated and pressurized miscellaneous cereals, which are fried in edible oil at, for example, 170-180 deg.C for 1-3min. |
