PURPOSE:To obtain the titled compound important as an intermediate for producing aspartame, a sweetner, in high yield without almost preparing beta-form as a by-product, by condensing N-formylaspartic anhydride with phenyraranine in water solvent at a specific pH. CONSTITUTION:N-Formylaspartic anhydride is condensed with phenylalanine in water as a solvent at 7-12pH at -20-20 deg.C, to give the aimed compound. To be concrete, phenylalanine is added to water, adjusted to a proper pH with an alkali, and N-formylaspartic anhydride is added little by little to phenylalanine, to carry out the reaction. Preferably the aimed compound is selectively precipitated by a method wherein a mineral acid such as ahydrochloric acid is added to the condensation reaction mixture and it is recovered.
