Flavour chip-contg. flour-based baked prods. having stable, soft chip texture after baking are prepd. as follows: (a) a bakeable dough or batter comprising a mixt. of solid flavour chips (I), a sugar, flour, N2O and shortening component (II) is prepd.; (b) the dough or batter is baked; and (c) the baked chip-contg. prod. is conditioned at 25-50 deg.C for 3-30 days. The dough or batter is free of emulsifier. (II) consists of a mixt. of (i) a shortening which is fluid at the temp. at which baked prods. are normally stored, and (ii) a shortening which is solid at these temps. |
