PURPOSE:A gene of glucoamylase in Rhyzopus is introduced into an enzyme in an expressible form and the resultant yeast is allowed to act on raw starch or starch steamed at low temperature whereby the addition of Rhyzopus glucoamylase is reduced or made completely unnecessary. CONSTITUTION:A glucoamylase gene is prepared from a filamentous fungus in Rhizopus, capable of producing glucoamylase, preferably Rhizopus oryzae and the gene is inserted together with the DNA fragment containing the promoter zone which is recognized by the host's gene expression and the expression mechanism of the information such as the tail zone, into the plasmid vector replicable in the host and the vector is used to effect the transformation of the host. When the host is a yeast, Rhizopus glucoamylases is produced by the tranformed yeast, the enzyme is released out of the cell bodies, thus the starch is saccharified by the enzyme and converted into alcohol by the yeast. |
