PURPOSE:To provide food and drink with harmonized flavor and good body, by decomposing animal or vegetable protein, subjecting the decomposed solution to ultrafiltration to give high-molecular polypeptide and adding the polypeptide to food and drink. CONSTITUTION:Animal or vegetable protein such as gelatin, bovine blood, egg, cow's milk, fish meat, yeast, soybean, etc., is decomposed with an acid, an alkali, or protease, the decomposition product is subjected to ultrafiltration to give a polypeptide having 20,000-100,000 molecular weight, which is added to a food (e.g., consomme soup, sausage, pickle, etc.). |
