PURPOSE:To preserve a processed food, by using a preservative comprising an aluminum salt or an iron salt or acetic acid as active ingredients, having high safety, and attaining sufficient effects. CONSTITUTION:A preservative comprising a chelate compound consisting of at least one substance selected from an aluminum salt such as alum, aluminum alum, etc. and an iron salt such as ferrous sulfate, ferric sulfate, etc. and acetic acid as active ingredients. Usually, about 0.05-10wt% active ingredients are added to a processed food, the processed food is kneaded with the active ingredient during blending, or the active ingredients are applied to the processed food.
