PURPOSE:To produce macaroni and spaghetti containing powdered milk, having the characteristic stickiness and flavor of powdered milk, excellent palatability and high untrient value, by adding a specific amount of defatted milk powder to durum wheat flour used as a main raw material. CONSTITUTION:In the preparation of macaroni or spaghetti by conventional method, defatted milk powder is added to durum wheat flour used as the mian raw material. The amount of the mild powder is about 5g per 100g of the wheat flour. |
