There is disclosed a stable sweetener delivery system capable of effecting a controlled release of the sweetener, the delivery system comprising: (a) at least one solid natural or artificial high intensity sweetener chosen from amino acid based sweeteners, dipeptide sweeteners, glycyrrhizin, saccharin and its salts, acesulfame salts, cyclamates, steviosides, talin, dihydrochalcone compounds and mixtures thereof; and (b) a hydrophobic matrix comprising (i) lecithin; (ii) an edible material having a melting point in the range of from 25 DEG C to 100 DEG C chosen from fatty acids having an iodine value of from 1 to 10, natural waxes, synthetic waxes, and mixtures thereof; and (iii) at least one glyceride. The delivery system can be incorporated in a chewing gum. |
