A device for removing flesh and fat remains from a hide 1 comprises a rotationally mounted elongated hide holder 2, a cutting tool 3 which is moveably provided along and parallel in relation to the hide holder 2, a first drive unit 5 for acting on the cutting tool and a second drive unit 7, which is designed to move the cutting tool along the hide holder. A hide 1, with the flesh side outwards, is placed against the hide holder 2. In order to produce just the right pressure between the cutting tool and the skin, while at the same time avoiding a continuous monitoring, the cutting tool 3 co-operates with a device 12 which presses the cutting tool against the hide holder, and whose bearing force is dependent on a circuit which regulates the pressure against the hide holder. The cutting tool 3 further co-operates with an overload protection 19, which is designed to remove the cutting tool 3 from contact with the hide at a predetermined load.
