PURPOSE:To produce dihydroxyacetone useful as an intermediate of glycerol, from methanol, in high efficiency, by culturing a dihydroxyacetone-producing strain belonging to Hansenula genus in a reaction solution containing methanol. CONSTITUTION:A dihydroxyacetone-producing strain belonging to Hansenula genus [e.g. Hansenula polymorpha MCI 1976 (FERM P-7954)] is cultured in a solution containing e.g. 0.05-10vol% methanol and preferably one or more other carbon sources (e.g. ethanol) e.g. at 4-10pH and 20-40 deg.C for 0.5-10 days.
