PURPOSE:To recover lysozyme in high yield from a lysozyme-containing liquid obtained from albumen, by pouring the liquid to the surface of an ultrafiltration membrane, and pressurizing and concentrating the liquid. CONSTITUTION:A lysozyme-containing liquid produced by the adsorption of albumen with an ion exchange resin, or a lysozyme-containing liquid obtained by the selective permeation of lysozyme of albumen with a selective protein- permeation membrane, is poured to the surface of an ultrafiltration membrane (a membrane having a critical molecular weight of 3,000-50,000, preferably a hollow fiber, etc. of polyacrylonitrile polymer having a critical molecular weight of <=13,000), and pressurized under a pressure of 0.1-10kg/cm<2> to effect the concentration of the lysozyme-containing liquid and to recover the lysozyme. The shape of the ultrafiltration membrane may be a hollow fiber or flat film, however, a hollow fiber having an inner diameter of 0.1-3mm and an outer diameter of 0.2-5mm is preferable.
