Process for the solvent extraction of 2,3-butanediol from aqueous solutions containing it, characterised in that the said solvent is a phosphoric ester having a boiling temperature substantially higher than that of 2,3-butanediol, with very little solubility in water and not forming an azeotrope with 2,3-butanediol. The process of the invention makes it possible to recover 2,3-butanediol, having an excellent purity, in a simple and efficient way.
