PURPOSE:To provide basket for the production of electrically processed food, capable of receiving a number of uniformly salted materials having arbitrary shapes, and enabling the uniform aging and thermal sterilization of the material by the action of electrical current while saving the power consumption. CONSTITUTION:A number of uniformly salted materials A having arbitrary shapes are stacked in an insulated casing 1 having a number of electrifying windows 3,3 at the circumferential wall 2 and integrated with a pair of electrifying plates 6,6 at both side walls. The insulated casing 1 is put into the insulated vessel 8, and dipped in a dilute salt solution B having lower salt concentration than the salt solution B having lower salt concentration than the salt concentration of the material A. Electrical current is passed by the electrode plate pair 6,6 through the material A to obtain the desired processed food. |
